PURPOSE OF THE POSITION:


The incumbent is responsible to assist with the preparation of pastry products under the supervision of the Chef de Partie to meet the expected food quality standard and deliver consistent culinary experience.


QUALIFICATIONS & EXPERIENCE :

  • Grade 12
  • Formal Culinary Qualification - Certificate or Diploma in Food Production
  • Minimum 5 years experience in a 4* or 5* hotel operations.
  • Proficient in various cooking techniques and methods, including pastries, cakes, mousses, high level of creativity, combined with ability to handle the pastry production
  • Knowledgeable about HACCP and health regulations
  • Computer Literacy: MS Office, MICROS, Materials Control.

KEY ACCOUNTABILITIES :

  • Evaluates and solves problems encountered, such as substituting items on menus, reusing cooked food, and reducing excess waste and spoilage.
  • Deliver products of the highest quality in terms of freshness, taste, and consistency
  • Checks station upon arrival to determine status of outstanding safety or equipment issues
  • Checks station prior to leaving to ensure cleanliness, proper disposal/removal of food and proper storing and labelling
  • Create, bake and decorate pastries and desserts according to specific dietary requirements, example (gluten free, sugar free, diabetes- friendly etc.).
  • Assists in planning and supervising production of all cold and hot desserts including la carte orders, buffet preparation and ensure that they are fresh and prepared in the correct manner.
  • Make sure quality and quantity meets our standard.
  • Be able to assist in same day preparation and advance preparation for another station as instructed by the supervisor.
  • Follow clean as you go policy and always keep work area clean.
  • Store ingredients in dedicated containers, making sure that they are best preserved and labelled according to standard.
  • Proper food rotation first in first out
  • Support the Food cost target, with control of wastage and productivity to ensure maximum profit.
