PURPOSE OF THE POSITION:


To support the daily operation in the assigned kitchen station under the supervision of the Chef de Partie to meet the expected food quality standard and deliver a consistent culinary experience.


QUALIFICATIONS & EXPERIENCES:


  • Grade 12
  • A minimum 2 years experience as a Demi or CDP chef in a 4* or 5* lodge/hotel operations.
  • Proficient in various cooking techniques and methods, including grilling, sauting, braising, and baking.
  • HACCP knowledge

KEY ACCOUNTABILITIES:


  • Organizes together with the Chef de Partie mise-en-place production and its service.
  • Ensure that all plating guides are followed according to set dish description, cooking method and presentation image.
  • Oversee and assist with, if required, the preparation of staff food daily.
  • Prepare fresh ingredients for cooking, according to recipes, quality standards, presentation standards, and food preparation checklist as designated by the Head Chef or Chef de Partie.
  • Test foods to ensure proper preparation and temperature to deliver products of the highest quality in terms of freshness, taste and consistency.
  • Assist with the quality, presentation, and preparation through innovative and varied menu planning.
  • Completes assigned prep work in an efficient time frame.
  • Moves prepared food out of the prep area continuously.
  • Inspect & clean food preparation areas, ensure safe personal hygiene & sanitary food-handling practices, HACCP, labelling practices, hygienic handling & storage of equipment & utensils.
  • Support the Food cost target, with control of wastage and productivity to ensure maximum profit.
  • Ensure proper food rotation first in first out.
  • Store ingredients in dedicated containers, making sure that they are best preserved and labelled according to standard.
  • Maintain daily ingredients par levels before each shift.
  • Checks station prior to leaving to ensure cleanliness, proper disposal/removal of food and proper storing and labelling.
