PURPOSE OF THE POSITION:


To ensure the cleanliness and proper organization of the dining and kitchen areas. Maintain all surfaces, areas and operating equipment under the control according to Health, Safety and hygiene standards.


QUALIFICATIONS & EXPERIENCE :


  • Grade 12.
  • Previous experience in a restaurant operation as a Steward in a 4* or 5* Restaurant or Hotel.
  • Good level of verbal and written English communication skills.

KEY ACCOUNTABILITIES :


  • Complies with policies relating to clean as you go, hygiene policies and dress code and ensures that all stewarding staff comply to above mentioned policies.
  • Rack dirty items (silverware, plate ware, etc.), sort silverware, inspect, pull, and stack cleaned items, allow cleaned items to air dry, spray all racked items with hot water to loosen and remove food residue, and breakdown dirty bus tubs.
  • Ensure water temperature and chemical levels are appropriate to run the dishwashing machine and complete proper documentation.
  • Wash and disinfect kitchen and storeroom areas including tables, tools, knives, and equipment to ensure sanitary conditions and meet departmental standards, including using sanitizers required by the health department.
  • Organize cleaning chemicals and supplies and ensure they are stored appropriately and kept separate from food products.
  • Collaborate with health auditors during inspections by conducting walkabouts to identify potential areas of improvement and ensure that health and safety standards are met and exceeded.
  • Adhere to HACCP regulations concerning health, safety, or other compliance requirements, as well as brand standards and HACCP policies and procedures.
  • Follow and ensure compliance with sanitation and cleaning procedures and pest control guidelines, reporting pest control issues to appropriate personnel.
  • Maintains the cleanliness of the dish and pot wash areas.
  • Removes refuse bins, empties, washes and replaces them in kitchen areas as required.
  • Ensures waste is sorted and waste area and bins are cleaned daily and practices the highest possible standard of hygiene.
  • Fills soap and chemical dispensers in all Food and Beverage areas.
  • Comply with health and safety standards within the kitchen to ensure a safe working environment for all staff members.
