PURPOSE OF THE POSITION:


To monitor and manage all cost control in the lodge through menu costing, beverage costing, consumables, revenue versus cost analysis and appropriate receiving and issuing procedures.



QUALIFICATIONS & EXPERIENCES:


  • Diploma in Accounting or Finance
  • 3-5 years of accounting experience in the hospitality industry, preferably in a lodge setting.
  • Computer literate (MS Office & Systems)
  • Expertise in financial planning, compliance, and risk management within a lodge context.
  • Proficiency in cash flow management and budgeting.
  • Knowledge of lodge-specific software, such as Micros or Materials Control.


KEY ACCOUNTABILITIES:


  • Perform accurate costing of menus according to standard procedures.
  • Maintain a comprehensive database for lodge inventory and input costs.
  • Utilize cost management tools to establish production prices, consumer prices, and cost of sales.
  • Create and manage products/articles/items in lodge stock systems such as Materials Control and Micros.
  • Oversee receiving, storing, and issuing of stock in compliance with procedures.
  • Manage procurement through minimum and maximum reorder levels.
  • Ensure proper storage and organization of stock to minimize losses.
  • Conduct monthly stock takes.
  • Produce accurate monthly stock variance reports.
  • Generate monthly usage (cost of sales) figures report.
  • Create accurate monthly usage journals for consumables.
  • Address discrepancies noted in stock variance reports promptly and implement corrective measures.
  • Analyze daily food and beverage revenue and stock usage using Materials Control.
  • Produce daily food and beverage cost of sales flash reports.
  • Implement cost-saving measures based on monthly analysis.
