PURPOSE OF THE POSITION:
To lead the Hilltop Deli & Restaurant to be the preferred choice in the region. Ensure living the O&L Persona and delivering a premium and unique Hartlief Customer Experience Journey. Manage operations to reflect the O&L Persona, ensuring compliance and aligning with the brand promise and overall premium positioning.
MINIMUM QUALIFICATION & EXPERIENCE REQUIREMENT:
- Diploma in Hospitality
- At least 6-8 years of world-wide experience in Delicatessen and Specialities as well as the Food & Beverage sector of which at least 3 years must be in a management role.
- Internationally accredited specialised chef training and/or skills in the preparation of a wide variety of different cuisine would be advantageous.
KEY JOB OUTPUTS:
- Ensure all aspects of the Customer facing touchpoints of the Hartlief Customer Experience Journey is in sync with the O&L Persona and overall brand promise (e.g. OE, environment, service, etc.).
- Ensure the target market experiences authentic cuisine that speaks to the theme and product delivery, atmosphere and service delivery.
- Ensure the menu offering and specials stay aligned to the theme to remain unique.
- Timeously and professionally handle any customers complaints and expectations regarding our products or service.
- Give direction on Culinary and Sales Strategies and resource the teams in driving the strategy (interdependence with all required stakeholders for alignment in all activities/initiatives).
- Build effective inter- and intra-departmental relationships.
- Coach Deli and restaurant employees on general meat cuts as well as special cuts and possible value addition to present the product as attractively as possible.
- Allocate (incl. shift scheduling), supervise and coordinate employees and ensure work is completed effectively, efficiently and on time.
- Offer on-the-job training and coaching to employees to motivate and develop the team, including setting objectives & goals.
- Create signature products/dishes which are known in the market and reflected in the sales mix and feedback platforms.
- Use innovation and creativity to drive revenue optimisation (e.g. specific menu for specific groups, guests, customers, etc.)
- Attend and keep abreast of local and international trends by attending international trade shows to ensure modern trends can be incorporated in the culinary experiences in all Hartlief Delis.
- Assists with compiling an annual financial budget for the Deli and restaurant as part of the departmental budget, with the input of the relevant parties.
- Ensure adherence to budgeted revenue numbers for the Deli and Restaurant.
- Manage all stock items and any variances relating to stock/stock counts.
- Adhere to all relevant hygiene, quality and food preparation practices at all times in line with the companies regulations, policies and procedures.
