PURPOSE OF POSITION:

To manage and monitor the execution of the Hartlief fresh meat production plan effectively and efficiently with the least cost incurred, by planning and organizing of meat-cutting and wholesale operations in accordance with recipes, set procedures and work instructions, efficient utilization of machinery/equipment, overseeing timeous preparation of meat and accurate stock control while adhering to Health & Safety and Quality standards/specifications.


MINIMUM QUALIFICATION & EXPERIENCE REQUIREMENT:

  • A Grade 12 with Butchery Training or Diploma in Butchery.
  • Minimum 3-5 years working experience in the managerial position OR An equivalent of more than 5 years working experience in the same/similar position in the FMCG Industry.

KEY JOB OUTPUTS:

  • Manage the process that is relevant machinery and equipment performed by Supervisor before production commences.
  • Request and receive meat and all relevant raw materials needed for daily production.
  • Manage and Monitor stock movements during the preparation and sorting of meat and products.
  • Manage and monitor that the preparation and cutting of meat are done according to the requirements on the recipe and that products are finished at right temperature and put into the coolers timeously.
  • Set-up daily, weekly, and monthly production targets.
  • Manage and monitor the stock receiving, storing, and issuing process on a daily basis to minimize stock variances.
  • Stock count to be captured weekly on the system.
  • Monitor and manage Stock levels on the system.
  • Receive stock according to prescribed quality standards, while ensuring that outgoing stock complies to the required maximum standard.
  • Discipline Production staff according to the Employee Relations Policy.
  • Manage and monitor time and attendance.
  • Approve and monitor leave applications for subordinates.
  • Allocate & coordinate work of staff.
  • Manage overtime worked and motivate manpower.
  • Adhere to Good Manufacturing and Good Hygiene Practices.
  • Inspect all machines, equipment, work areas and containers/mini cars/crates. All equipment to be cleaned and sanitized to comply with HACCP Food Safety requirements.
