PURPOSE OF THE POSITION:
Exhibits culinary talents by personally performing tasks while assisting in leading the staff and managing all food related functions. Works to continually improve guest and employee satisfaction while maximizing the financial performance in all areas of responsibility.
QUALIFICATIONS & EXPERIENCE :
- Culinary Certificate or diploma.
- Minimum 6-8 years experience in a 5-star property or restaurant.
- Minimum 2 years international experience.
- Cuisines from other countries.
- HACCP trained or the equivalent.
- All-rounder in the kitchen will be an added advantage.
- Knowledge in sea food.
KEY ACCOUNTABILITIES :
- Supervising and managing all kitchen areas to ensure a consistent, high-quality product is produced.
- Responsible for guiding and developing staff including direct reports.
- Responsible for menu, recipe, and food design.
- Food financial/procurement management of the department.
- Ensure guest satisfaction through continually driving excellence in the preparation and presentation of dishes.
- Guest engagement/interaction to ensure all expectations are met or exceeded.
- Proactively communicating market trends and possible changes in guest preferences and expectations on F&B offering to management.
- Share responsibility for all O&L Leisure Policies regarding the audit requirements.
- Contributes to Revenue Control by sharing responsibility for the restaurants financial performance and long-term sustainability.
- Ensure sea food brand and quality standards are always met.
- Excellent people development and management skills.
- Ensure sanitation and food standards are achieved.
