PURPOSE OF THE POSITION:
Responsible for supervising the Pastry part of the kitchen. Responsible for quality of a la carte, set menu or buffet meals and all relevant planning, preparation, training, maintenance of a la carte, set menu or buffet meals
QUALIFICATIONS & EXPERIENCES
- Grade 12
- Culinary certificate or diploma
- Minimum 3 years in the same position in a 5* star establishment
- Knowledgeable about HACCP and health regulations
- Strong Pastry Background preferred
- Strong leadership skills required
KEY ACCOUNTABILITIES
- Ensures that all mise-en-place is completed prior to food service periods.
- Ensures that proper cooking methods are adhered to at all times.
- Ensures that work practices are efficient, clean and hygienic.
- Ensures that all items of equipment, which has been used, are correctly stored after they have been cleaned.
- Responsible for the development and work performance of the junior staff in those parts of the kitchen for which she/he is responsible.
- Attends training courses when nominated by the Executive Chef.
- Ensures that stores, refrigerators and freezers in the department are always clean and tidy.
- Uses skills to ensure that pastry items prepared are of the highest quality.
- Avoids unnecessary wastage and monitors junior staff on wastage
- Manages and supervises shifts
- Performs order placing for following days activities.
- Assists if required in the training of all kitchen staff with particular attention being paid to trainees.
- Performs additional duties as required or as requested by the Executive Chef or Executive Sous Chef.
- Assists with problem solving as challenges occur during the shift
- Monthly purchasing budget, Closing stock controls
- Lock down of fridges and issue policy
- Food cost budget and associated food controls
- Ensures clean and hygienic conditions in all work areas including all refrigerators and storage areas.
- Ensure all paperwork for Health and Safety is updated daily
- Be familiar with First Aid procedures and also fire and emergency procedures and the necessary reporting which is required.
- Fully familiarised with all hotel and company policies, as well as hotel programmes offered such as Loyalty programmes, audit and service measurement programmes and merit awards.
- Demonstrate exceptional level of professionalism, maturity and emotional intelligence at all times
- Attends regular meetings with other management members as defined by the General Manager to facilitate the smooth running of the department and the rest of the Hotel
- Ensure the security of confidential documents and trade secrets.
- Attend to any reasonable request made by Senior Management
- Report and where possible handle cases of accident, fire, theft, loss, damage or contravention of regulations.
- Relief and assist in all areas during periods of absence or crisis.
