Requirements

  • BA: Food and Beverage Management and\or Culinary Arts
  • Min 8 years experience managing a multiple outlet operation - Front and Back of House
  • Experience in a 4 or 5 star commercial kitchen
  • Experience in food & beverage business development and operations
  • Experience in Culinary operations and project management

Purpose of Position

To direct and oversee all aspects of the organization's culinary and beverage operations. The role will be responsible for planning and execution of service operations at highest standards in all restaurants, outlets, and kitchens. Role will further demonstrate leadership, creativity, integrity and consistency in performance

Key Deliverables

  • Establishes excellent relations with guests and customers, including driving key account activities
  • Develop and Maintain Food and Beverage and Culinary strategic and financial goals
  • Drive all the Food and Beverage Efficiency and performance ratios in line with international benchmark levels
  • Develop profitable menu items with a cost balancing system
  • Ensure that recipe costings are maintained and updated on a regular basis
  • Development and maintenance of all front and back of house department control procedures
  • Assist in menu engineering in line with concept and culinary programs
  • Manage, train, mentor and develop the food and beverage leadership teams (Outlet managers, head chefs, and Assistant Managers and supervisors)
  • Provides direction to culinary Leadership to assure compliance with all concept culinary programs and initiatives.
  • Supervise and coordinate all aspects of food production of a large-scale food preparation operation, including daily production of all foods and assisting with staffing requirements

  • Strong organizational and leadership skills
  • Ability to be a self-motivator working productively with minimal direct supervision
  • Strong numerical acumen - analysing and reporting
  • Strength in process design, including implementation and management of operational controls
  • Profound appreciation of Food and Beverage efficiency and performance ratio
